Dehydrating Cabbage

Holy Cow, let me just get the most important fact about dehydrating cabbage out first – it stinks, not as in, it’s not fun, but it STINKS with a big P-U.  Dehydrate this outside!!!

I’m planning to add my cabbage to my vegetable soups this winter.  I dehydrated 3/4 of my cabbage (I turned 1/4 of it into coleslaw) and ended up with 2 quart jars of cabbage.  I’ll show you my storage method in another post and I’ll let you know how my cabbage re-hydrates in my soups this winter!
