We had an awesome class on Natural Yeast this week. Melissa aka “TheBreadGeek” came and amazed us all with her knowledge of using Natural Yeast vs. store purchased yeast. The health benefits alone are enough to make me a believer. Now I just need to name my start and keep it alive. If you attended the class and took a new “pet” home to live with you, I’d love to hear how you are doing, what you are making and your up’s and down’s of using natural yeast. I think this is a jump in with both feet kind of project and can be a life changer for those who suffer from the not so fun side effects of commercial yeast. It turns out that wheat might not be the “enemy” after all. If you suffer from gluten intolerance or acid reflux etc. I encourage you to check out Melissa’s book Baking with Natural Yeast.
