Ch..Ch..Ch..Chia

I had a “I’m getting old and grew up in the 80’s” moment yesterday.  My daughter andphoto her friend, Aubrey were in the kitchen while I was bagging up chia yesterday when Aubrey asked me, “what I was doing.”  I explained I was bagging up chia, “you know like the Chia Pet.”  She had no idea what I was talking about, which of course led to a lengthy discussion not only about the Chia Pet but also The Clapper :)!  Thank goodness for YouTube, it explained everything perfectly!

If your knowledge of chia stops with “The Chia Pet” check out Bob’s handout and read up on all the killer benefits of chia!  Not sprouting seeds on Homer Simpson’s or Obama’s head, but the amazing  health benefits of this tiny little seed.  The benefits are plentiful and the thing I like best about chia is that it’s super easy to add into your diet.

Just throw 2 T. per day into your yogurt, oatmeal, pancakes, smoothies, etc., etc., etc.  My prefered method is Chia Pudding.  My husband just opens up and swallows 2 T. dry or adds it to a cup of water if he’s in a hurry.  Not my cup of tea Tongue Out  Chia doesn’t taste, but it does change the texture of food.  One of the benefits of chia is that it expands in liquid, so it helps eliminate hunger.  However, it will also make water kinda lumpy and slimy, so whatever you do, don’t add it to your cup of milk, YUCK!!!

Chia Pudding

2 Cups Vanilla Almond Milk or Coconut Milk (found in the refrigerated section of the grocery store in paper cartons)
1/2 cup Chia Seeds (just dump them in dry)
2 T. Raw Agave Nectar (I’m pretty sure I found this in the baking section)
1/2 tsp. ground cinnamon
Whisk all of the ingredients together.  (I like to whisk it every so often for about 30 min.)  Cover and refrigerate for 4 hours. Serve with a dollop of Greek Vanilla Yogurt and fresh berries.  (Or just grab a spoon and snag a few bites for a super quick pick-me-up!)
